Steps
Brownie Layer
Preheat your oven and line a springform pan with parchment paper.
In a bowl, combine the ingredients for the fudge sauce. Add the sugar and whisk until dissolved.
Whisk in the aquafaba (chickpea brine) and dairy-free yogurt to replace the eggs.
Finish the brownie batter by folding in the dry ingredients until smooth.
Pour the batter into the prepared springform pan and bake. Once finished, let the brownie layer cool completely.
Mousse Layer
In a separate large bowl, combine 2 cups of cold vegan heavy cream, 2 cups of room temperature vegan cream cheese, 1 cup of powdered sugar, and 1 cup of peanut butter.
Add a little vanilla and sea salt for flavor, then whip the mixture until it is fluffy and thick.
Spoon the peanut butter mousse on top of the cooled brownie base in the springform pan and smooth the top.
Assembly and Finishing
Place the cake in the refrigerator to set overnight.
Prepare the two-ingredient ganache by melting dairy-free chocolate with dairy-free cream until silky. Pour the ganache over the chilled mousse layer before serving.
Notes
Ensure the brownie is completely cool before adding the mousse to prevent melting. The mousse requires overnight chilling to set properly without gelatin.
