- 2 tbsp coconut oil (melted; for the plain version)
- 0.75 tsp fine sea salt (use less if using table salt)
- 1 tbsp light brown sugar (firmly packed; for the plain version)
- 2 tbsp olive oil (for the seasoned version)
- 0.25 tsp pepper (for the seasoned version)
- 0.5 tsp ground chili powder (for the seasoned version)
- 0.5 tsp paprika (for the seasoned version)
- 0.5 tsp ground cumin (for the seasoned version)
- 0.5 tsp garlic powder (for the seasoned version)

For Plain Roasted Sweet Potatoes: Add the cubed potatoes to your largest sheet pan. Drizzle with 2 tablespoons of melted coconut oil and sprinkle with 3/4 teaspoon fine sea salt and 1 tablespoon light brown sugar.

For Seasoned Roasted Sweet Potatoes: Add the cubed potatoes to your largest sheet pan. Drizzle with 2 tablespoons of olive oil and sprinkle with 3/4 teaspoon fine sea salt, 1/4 teaspoon pepper, 1/2 teaspoon chili powder, 1/2 teaspoon paprika, 1/2 teaspoon ground cumin, and 1/2 teaspoon garlic powder.

Toss the potatoes thoroughly to ensure every piece is evenly coated with the oil and seasonings.

Spread the potatoes out in a single, even layer. Ensure no potatoes are overlapping to prevent them from steaming; use a second sheet pan if necessary.

Flip the potatoes every 10–15 minutes (flipping every 10 minutes is recommended) to ensure even browning and caramelization on all sides.

Notes
Use a large sheet pan (like a 15x21 inch) to give the potatoes plenty of room to roast rather than steam. Stick with orange or red-skinned sweet potatoes (like Red Garnet or Jewel) for a creamier, sweeter result. If using table salt instead of fine sea salt, reduce the amount slightly. For the seasoned version, you can substitute chipotle chili powder or smoked paprika for a different flavor profile.
