Ingredients
- 1 cup Oat flour (gluten-free if needed)
- 0.5 cup Vanilla protein powder (approx. 2 scoops)
- 0.5 cup Peanut butter (divided; creamy preferred for caramel layer)
- 0.25 cup Maple syrup (divided)
- 0.25 cup Peanuts (roasted, unsalted or lightly salted)
- 100 g Dark chocolate (melted for coating)

In a medium mixing bowl, combine the oat flour, vanilla protein powder, and a portion of the peanut butter and maple syrup to create a dough-like consistency for the base.

Press the base mixture firmly into a small rectangular container or silicone mold lined with parchment paper.

Prepare the peanut caramel layer by whisking together the remaining peanut butter and maple syrup until smooth and thick.

Spread the peanut caramel layer evenly over the protein base.

Press the whole or chopped peanuts into the caramel layer to ensure they stick.

Place the container in the freezer for at least 30-60 minutes to set.

Once set, remove from the freezer and slice into bite-sized bars or squares.

Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

Dip each bite into the melted dark chocolate until fully coated, then place back on parchment paper to set.
Notes
Store these bites in the refrigerator for up to a week or in the freezer for up to a month. If they are too hard straight from the freezer, let them sit at room temperature for 5 minutes before eating.
