Mexican Corn Dip with Fried Screw-Shaped Snack

Ingredients
- 1 lata Canned corn, drained (Approximately 340 g; cooked and shucked corn may also be used.)
- 200 g Mexican table cream (Add gradually; more or less may be used depending on the desired consistency.)
- 2 Lime (Juiced; add more to taste.)
- Valentina hot sauce (To taste.)
- Tajín (To taste, for finishing.)
- Mexican screw-shaped snack (As needed for serving and frying; the creator indicates that regular pasta does not work the same way.)
- Vegetable oil (For frying; use enough to fully cover the snack.)

Drain the canned corn. If using fresh or frozen corn, cook it beforehand and let it cool before preparing the dip.

Place the corn in a large bowl.

Add the Mexican table cream gradually. You may use all of it or only part of it, according to your preference.

Mix the corn and table cream until combined. The final consistency should be creamy and thick enough to scoop with the fried snack; add more table cream if the mixture seems dry.

Squeeze the two limes over the dip and mix again. Taste and add more juice if you prefer a tangier flavor.

Add Valentina hot sauce to taste and mix until evenly distributed. Adjust the amount according to the desired level of spiciness.

Sprinkle Tajín to taste over the dip. You can mix some in and reserve a little for garnishing when serving.

Heat enough vegetable oil in a pot or deep skillet to approximately 175–180 °C, until very hot but not smoking.

Carefully add the screw-shaped snack to the hot oil, working in batches so as not to overcrowd the vessel.

Fry the snack for a few seconds, until puffed and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with the remaining snack.

Serve the corn dip immediately with the fried screw-shaped snack. Enjoy the dip with the snack while it is still crispy.
Notes
Adjust the amount of table cream, Valentina hot sauce, Tajín, and lime to taste. The creator notes that the screw-shaped snack works better for this preparation than regular pasta. Fry carefully and do not leave the oil unattended.
