Ingredients
- 1.5 lb boneless skinless chicken breasts (cut lengthwise in half)
- 3 tbsp taco seasoning
- 1.5 chipotles in adobo sauce (1-2 peppers depending on heat preference)
- 0.5 tbsp adobo sauce (from the chipotle can)
- 0.25 cup honey
- 1 tbsp fresh lime juice
- 12 tortillas (small flour or corn tortillas)
- 4 cup cilantro lime rice (for serving)
Steps
- 1
Cut the chicken breasts lengthwise in half and coat them evenly with the taco seasoning.
- 2
Arrange the seasoned chicken in the air fryer basket and cook at 400°F (200°C) for 10 minutes.
- 3
While the chicken cooks, prepare the chipotle honey sauce by mixing the chipotles, adobo sauce, honey, and lime juice in a blender until smooth.
- 4
After the initial 10 minutes of cooking, flip the chicken pieces and apply the chipotle honey sauce generously to the surface.
- 5
Air fry again at 400°F (200°C) for 2 more minutes to caramelize the glaze.
- 6
Take the chicken out, brush with any leftover sauce, and chop or slice the meat.
- 7
Serve immediately in tortillas with cilantro lime rice and your choice of toppings like salsa, avocado, or sour cream.
Notes
For a family-friendly version, use one chipotle; use two for more spice. To keep the meal gluten-free, ensure you use corn tortillas. Leftover chicken can be stored in an airtight container for up to 6 days and reheats well in the air fryer at 400°F for 3-4 minutes.
