Ingredients

  • 4 Corn on the cob (with husks attached)
  • 0.5 cup Cotija cheese (crumbled)
  • 2 tbsp Fresh cilantro (roughly chopped)
  • 0.25 cup Mayonnaise (mayonesa)
  • 1 tsp Lime juice (a sliver of lime)
  • 2 tbsp Unsalted butter (one stick used for brushing multiple cobs)
  • Chili powder (to taste)
  • Hot sauce (your favorite brand, to taste)
  • Margarine (squeezable, for finishing)
  • Tajin seasoning (referred to as tahini in transcript, to taste)

Steps

  1. 1

Steam the corn on the cob for approximately 5 minutes until tender.

  2. 2

Remove the corn from the steamer and let it rest briefly.

  3. 3

In a small bowl, break up the cotija cheese into fine crumbles.

  4. 4

Roughly chop a handful of fresh cilantro and add it to the bowl with the cheese. Mix well and set aside.

  5. 5

In a second bowl, combine the mayonnaise with a sliver of fresh lime juice and whisk until smooth.

  6. 6

Prepare the corn by stripping down the husks towards the base without ripping them off. Insert a wooden skewer into the bottom of the cob.

  7. 7

Pull the husks down around the skewer and tie them off using a stray piece of husk to create a handle.

  8. 8

Use a kitchen torch to lightly char the outside of the corn kernels to add color and a smoky flavor.

  9. 9

Take a stick of butter and rub it up and down the entire length of the warm corn cob until well coated.

  10. 10

Nicely coat the buttered corn with the mayonnaise and lime mixture.

  11. 11

Scoop the cheese and cilantro mixture over the corn, rotating the cob to ensure even coverage.

  12. 12

Finish by adding chili powder, your favorite hot sauce, a squeeze of margarine, and a sprinkle of Tajin (chili-lime seasoning) to taste.

Notes

The transcript mentions 'tahini' at the end, but based on the context of Mexican street corn, this is almost certainly Tajin seasoning. The husks are kept on to serve as a decorative and functional handle.
