- 1 tbsp olive oil
- 0.5 cup onion (chopped)
- 2 garlic (minced)
- 1 tsp kosher salt (divided)
- 1 cup orzo pasta
- 0.33 cup white wine
- 14.5 oz diced tomatoes (1 can)
- 10.5 oz condensed cream of mushroom soup (1 can)
- 0.75 tsp ground black pepper (divided; plus more to taste)
- 1 cup Parmesan cheese (grated, divided)
- 1 lb large frozen peeled shrimp (partially thawed)
- 0.25 tsp crushed red pepper
- 0.5 cup butter (cut into tablespoon-sized pieces)
- 1 lemon juice (from 1 lemon)
- parsley (chopped, for garnish)

Preheat the oven to 350 degrees F (180 degrees C).

Heat olive oil in a large, deep ovenproof skillet over medium-high heat.

Add chopped onion and cook until beginning to soften, about 3 minutes.

Add minced garlic, sprinkle with 3/4 teaspoon of the kosher salt, and cook for 2 minutes.

Stir in the orzo pasta until coated and lightly toasted, about 1 minute.

Add white wine and cook for 1 minute.

Stir in the diced tomatoes and condensed cream of mushroom soup.

Fill the empty tomato can with water and add it to the orzo mixture.

Stir in 1/4 teaspoon of the black pepper.

Bring the mixture to a simmer, stirring often to prevent sticking, until the pasta begins to soften, about 5 to 7 minutes.

Stir in the remaining 1/2 teaspoon black pepper and remove the skillet from the heat.

Top the mixture with 2/3 cup of the Parmesan cheese and arrange the shrimp in a single layer on top.

Sprinkle with the remaining 1/4 teaspoon salt, extra black pepper to taste, and the crushed red pepper.

Bake in the preheated oven until the orzo is tender and the shrimp are pink and opaque, 25 to 30 minutes.

Notes
Using the empty tomato can to measure the water ensures you get all the remaining tomato juices into the dish. Ensure the shrimp are at least partially thawed to ensure they cook through within the oven time.
