Ingredients

  • 0.5 cup Mayonnaise (Dukes brand recommended)
  • 0.25 cup Sour cream
  • 1 tsp Old Bay seasoning (plus more for batter)
  • 0.5 tsp Paprika
  • 1 tbsp Lemon juice
  • 1 cup All-purpose flour
  • 0.25 cup Cornstarch
  • 1 tsp Baking powder
  • 1 tsp Garlic pepper seasoning (Chilaz brand recommended)
  • 0.75 cup Beer (cold; add until batter reaches desired consistency)
  • 4 Lobster tails (removed from shell and cleaned)
  • Oil (for frying)
  • Fresh parsley (chopped for garnish)

Steps

  1. 1

Prepare the Old Bay crema by combining the mayonnaise, sour cream, Old Bay seasoning, paprika, and lemon juice in a small bowl. Whisk until smooth and set aside.

  2. 2

In a separate bowl, prepare the batter by whisking together the flour, cornstarch, and baking powder.

  3. 3

Season the dry batter mixture with garlic pepper seasoning and additional Old Bay seasoning.

  4. 4

Gradually pour in the beer while whisking until the batter is smooth and reaches a thick, dipping consistency.

  5. 5

Remove the lobster meat from the shells and ensure they are clean. Skewer each lobster tail lengthwise with a wooden skewer to create the 'lollipop' shape.

  6. 6

Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

  7. 7

Dip each skewered lobster tail into the batter, ensuring it is fully and evenly coated.

  8. 8

Carefully place the battered lobster into the hot oil and fry until the coating is golden brown and the lobster is cooked through.

  9. 9

Remove the lobster lollipops from the oil and drain on a wire rack or paper towels.

  10. 10

Drizzle the prepared Old Bay crema over the fried lobster lollipops and garnish with fresh parsley before serving.

Notes

The author suggests serving these with crab hushpuppies. Ensure the beer is cold for a crispier batter. If you cannot find Chilaz garlic pepper, any high-quality garlic pepper blend will work.
