  • 1 Large egg (room temperature)
  • 0.25 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 0.5 tsp Lemon juice
  • 1 cup Unsalted butter (for browning)
  • 0.5 cup Dutch-process cocoa powder
  • 1 tsp Vanilla extract (for the brownie batter)
  • 0.5 cup Light brown sugar (packed)
  • 1 tsp Espresso powder
  • 1.75 cups Powdered sugar
  • 0.75 cup Semi-sweet chocolate chips
  • 0.333 cup Semi-sweet chocolate (chopped)
  • 3 Large eggs (room temperature)
  • 0.5 cup All-purpose flour
  • 0.5 tsp Salt
  • 3 tbsp Olive oil

Steps

    Preheat the oven to 350°F (175°C). Grease an 8-by-8-inch baking pan and line it with parchment paper, leaving some overhang to lift out the brownies after baking.

    Make the cream cheese layer. Add the softened cream cheese, room-temperature egg, granulated sugar, vanilla extract, and lemon juice to a bowl. Whisk until completely smooth and no lumps remain. Set aside.

    Brown the butter. Place the butter in a saucepan over medium-low heat and cook, stirring about every 10 seconds. Continue until the milk solids sink to the bottom and turn golden brown, and the butter smells nutty.

    Immediately transfer the browned butter to a heatproof bowl so it does not continue cooking in the hot saucepan.

    Add the cocoa powder, olive oil, vanilla extract, chopped semi-sweet chocolate, and espresso powder to the hot browned butter. Stir until the chocolate is melted and the mixture is smooth and well combined.
