Ingredients

  • 3 lb beef chuck roast (Trim excess surface fat; keep the roast whole.)
  • 2 lb baby potatoes (Halved if large.)
  • 0.5 cup unsalted butter (Cut into pieces.)
  • 6 cloves garlic (Minced.)
  • 1 tbsp Italian seasoning
  • 1 cup beef broth
  • kosher salt (To taste.)
  • black pepper (To taste.)
  • 2 tbsp fresh parsley (Chopped, for serving.)
