South Indian Filter Coffee
A traditional South Indian coffee made by slowly brewing finely ground coffee in a metal filter, then combining the strong decoction with hot milk and sugar. It is traditionally served frothy in a stainless-steel tumbler and dabarah.

Ingredients
- 3 tbsp South Indian filter coffee powder (Finely ground coffee, traditionally a coffee-and-chicory blend)
- 180 ml Boiling water (For brewing the coffee decoction)
- 300 ml Whole milk (Hot; use more or less according to taste)
- 2 tbsp Granulated sugar (Adjust to taste)

Place the perforated upper chamber of a South Indian coffee filter over its lower collection chamber. Add the coffee powder to the upper chamber and spread it into an even layer without packing it tightly.

Pour the boiling water evenly over the coffee powder until the upper chamber is filled. Fit the press gently on top so the grounds are compacted lightly, then cover the filter.

Leave the filter undisturbed for about 8–10 minutes, allowing the water to drip slowly through the grounds and collect as a dark, concentrated decoction in the lower chamber.

While the coffee brews, heat the milk in a saucepan over medium heat until steaming and very hot. Do not allow it to scorch; a brief simmer is fine.

Add about 2 tablespoons of the prepared coffee decoction to each serving tumbler. Use more decoction for a stronger coffee.

Add 1 tablespoon of sugar to each tumbler, or adjust the amount to taste.

Pour the hot milk into the tumblers and stir until the sugar dissolves and the coffee is evenly combined.

For the traditional frothy finish, pour the coffee back and forth several times between a stainless-steel tumbler and a dabarah, or whisk briefly, until a light foam forms. Serve immediately while hot.
