Balsamic Cabbage Steaks
Thick slices of green cabbage roasted in the oven with a marinade of olive oil, balsamic vinegar, agave, and spices. They become caramelized and crisp around the edges while remaining tender and juicy in the center.

Ingredients
- 1 green cabbage (Remove any damaged outer leaves; cut into ¾- to 1-inch-thick steaks, keeping the core intact.)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp agave syrup
- 1 tsp garlic powder
- 1 tsp dried oregano
- 0.5 tsp salt (Or to taste.)
- 0.25 tsp ground black pepper (Or to taste.)
- fresh parsley or fresh dill (Optional, for garnish; approximately 5 g is estimated.)

Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.

Remove any damaged outer leaves from the cabbage. Place the cabbage on a cutting board and cut it crosswise into thick steaks approximately ¾ to 1 inch (2 to 2.5 cm) thick. Keep the core intact so each steak holds its shape.

Arrange the cabbage steaks on the prepared baking sheet in a single layer, without overlapping.

In a small bowl, add the olive oil, balsamic vinegar, agave syrup, garlic powder, dried oregano, salt, and black pepper.

Whisk the mixture until the oil and vinegar are well incorporated and a uniform marinade forms.

Generously brush the marinade over the top of each cabbage steak.

Turn each steak over and brush the other side as well, making sure to coat the edges and surfaces thoroughly.

Bake for 25–30 minutes, until the edges are deeply browned, crisp, and caramelized, and the center is tender. If necessary, check for doneness by piercing the center with a fork.

Remove the steaks from the oven. Optionally garnish with fresh parsley or dill and serve hot.
Notes
Serve them as a light side dish or eat them straight from the baking sheet. Adjust the salt and pepper to taste; you can also add your favorite toppings.
