Hearty Beef Macaroni Soup

- 1 tbsp olive oil
- 1 lb ground beef
- 1 onion (small, diced)
- 2 celery stalks (chopped)
- 1 green bell pepper (diced)
- 3 cloves garlic (minced)
- 14.5 oz diced tomatoes (1 can)
- 15 oz tomato sauce (1 can)
- 4 cup beef broth
- 1 tsp Italian seasoning
- 1 tsp paprika
- salt (to taste)
- black pepper (to taste)
- 1.5 cup elbow macaroni

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.

Add 1 lb of ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks.

Drain the excess fat from the pot.

Add the diced onion, chopped celery, diced green bell pepper, and minced garlic to the pot. Cook until the vegetables have softened.

Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.

Add 1.5 cups of elbow macaroni and cook until the pasta is tender, which should take about 8–10 minutes.
