Ingredients

  • 16 oz ground chicken
  • 1 cup panko breadcrumbs
  • 7 Mission Carb Balance tortillas (45-calorie tortillas)
  • 2 tsp salt (For seasoning the chicken)
  • 1 tsp garlic powder (For seasoning the chicken)
  • 1 tsp onion powder (For seasoning the chicken)
  • 1 tsp dried oregano (For seasoning the chicken)
  • 0.5 tsp black pepper (For seasoning the chicken)
  • 1 head romaine lettuce (Chopped)
  • 1 cup nonfat Greek yogurt (For the Caesar dressing)
  • 3 tbsp light mayonnaise (For the Caesar dressing)
  • 2 tbsp Dijon mustard (For the Caesar dressing)
  • 1 tbsp Worcestershire sauce (For the Caesar dressing)
  • 20 g Parmesan cheese (Freshly grated)
  • 1 tbsp garlic paste (For the Caesar dressing)
  • 2 tsp salt (For the Caesar dressing)
  • 1 tsp black pepper (For the Caesar dressing)
  • 2 tsp lemon juice (For the Caesar dressing)

Steps

  1. 1

Place the ground chicken in a bowl. Add the chicken-seasoning salt, garlic powder, onion powder, oregano, and black pepper, then mix thoroughly until the seasoning is evenly distributed.

  2. 2

Lay the seven tortillas flat. Using the back of a spoon, press an even layer of the seasoned ground chicken across the surface of each tortilla, spreading it all the way toward the edges.

  3. 3

Spread the panko breadcrumbs over a flat plate. Place a chicken-coated tortilla chicken-side down onto the panko and rotate or press it back and forth until the chicken is fully coated with breadcrumbs. Repeat with the remaining tortillas.

  4. 4

Heat a skillet or flat pan over medium heat. Place the coated tacos chicken-side down in the pan and cook for about 5 minutes, until the chicken is cooked through and the panko is crisp and golden.

  5. 5

Flip each taco carefully and cook the tortilla side for about 2 minutes, until the tortilla is crisp and the chicken reaches 165°F / 74°C internally.

  6. 6

While the tacos cook, place the nonfat Greek yogurt, light mayonnaise, Dijon mustard, Worcestershire sauce, dressing salt, dressing black pepper, garlic paste, lemon juice, and freshly grated Parmesan in a bowl. Stir until smooth and well combined.

  7. 7

Add the chopped romaine lettuce to the dressing and toss until the lettuce is evenly coated, creating the Caesar salad topping.

  8. 8

Remove the crispy chicken tacos from the pan. Top each taco with the Caesar salad and serve immediately.
