- 1 lb potatoes (sliced into rounds)
- 1 lb ground beef (lean)
- 1 onion (chopped)
- 1 bell pepper (chopped)
- seasonings (such as salt, pepper, and garlic powder to taste)
- 14.5 oz canned diced tomatoes (undrained)

Prepare the slow cooker by lightly greasing the insert with cooking spray.

Layer the sliced potatoes at the bottom of the slow cooker to form Layer One.

In a mixing bowl, combine the ground beef, chopped onion, and chopped bell pepper.

Add your preferred seasonings to the beef mixture and mix well to incorporate.

Spread the beef, onion, and pepper mixture over the potatoes to form Layers Two, Three, and Four.

Top the casserole with the canned diced tomatoes, spreading them evenly across the top.
