Ingredients
- 1 lb Chicken breast (diced into bite-sized pieces)
- 1 lb Beef (diced into bite-sized pieces)
- 3 Garlic (cloves, minced)
- 1 tsp Paprika
- 0.5 tsp Thyme (dried)
- 0.5 tsp Mixed herbs
- Salt (to taste)
- 1 Seasoning cube (e.g., Maggi or Knorr)
- 3 tbsp Vegetable oil (divided)
- 1 Onions (chopped)
- 2 Peppers (chopped (scotch bonnet or habanero for heat))
- 3 Spring onions (chopped, divided)
- 2 Carrots (sliced or diced)
- 2 Mixed bell peppers (chopped)
- 2 tbsp Oyster sauce
- 1 tbsp Soy sauce
- 2 tbsp Sweet chilli sauce
- 1 tbsp Cornflour (for slurry)
- 0.5 cup Water (plus extra for cornflour slurry)
Steps
- 1
Dice the chicken breast and beef into bite-sized pieces.
- 2
In a bowl, season both the chicken and beef with minced garlic, paprika, thyme, mixed herbs, salt, and a crumbled seasoning cube.
- 3
Add a little vegetable oil to the meat and mix everything properly, ensuring every piece is well coated in the marinade.
- 4
Heat a lightly oiled pan over medium-high heat. Add the chicken first and cook until it is fully cooked through, then remove from the pan and set aside.
- 5
In the same pan, fry the beef until it is fully cooked and browned, then remove and set aside with the chicken.
- 6
In the same pan (adding a splash more oil if needed), add the chopped onions and sauté until they soften slightly.
- 7
Add the chopped peppers and a portion of the spring onions to the pan.
- 8
Add the carrots and mixed bell peppers, stirring everything together to combine.
- 9
Return the fried chicken and beef to the pan and mix gently with the vegetables.
- 10
Adjust the seasoning with extra salt or herbs if desired, then add just enough water (about 1/2 cup) to help cook everything together.
- 11
In a small bowl, whisk together the oyster sauce, soy sauce, and sweet chili sauce. Pour this mixture into the pan; you will see the color of the sauce deepen.
- 12
Give the sauce a good stir and let it simmer gently for a few minutes.
- 13
To thicken, mix cornflour with a little water in a small cup to create a slurry. Pour it slowly into the pan, stirring constantly as the sauce thickens.
- 14
Finish by stirring in fresh chopped spring onions. Cover the pan for a few minutes to allow everything to steam together.
- 15
Serve hot over white rice.
Notes
The creator suggests this as a great alternative to traditional Nigerian rice and stew. You can adjust the heat level by choosing different types of peppers (e.g., Scotch Bonnet for high heat).
