Homemade Healthy Beef Suya
A healthier, oven-roasted version of the classic West African street food. Thinly sliced beef is tenderized, marinated in aromatics, and coated in spicy yaji (suya spice) for a smoky, savory flavor profile.

Ingredients
- 1 lb beef (sliced into thin strips; use a tender cut like sirloin or flank)
- 5 tbsp olive oil
- 1 tsp Maggi seasoning (about 2 bouillon cubes, crushed)
- 1 tsp salt
- 1 tsp onion powder
- 0.25 tsp garlic powder (a little sprinkle)
- 0.25 cup yaji (aka suya spice; use as much as you want to coat the meat)

Using a very sharp knife, slice the beef into thin strips.

Flatten the meat strips with a heavy object (such as a ceramic bowl or meat mallet) to tenderize them.

Cut the tenderized meat into smaller vertical strips and set aside in a bowl.

In a separate small bowl, combine 5 tablespoons of olive oil, 1 teaspoon of Maggi seasoning (crushed cubes), 1 teaspoon of salt, 1 teaspoon of onion powder, and a sprinkle of garlic powder.

Pour the marinade over the beef and mix thoroughly to ensure every strip is coated.

Cover the bowl and place it in the fridge to marinate for at least 1 hour.

Once marinated, remove the beef from the fridge. Add the yaji (suya spice) to the meat, pressing it firmly so the spice sticks to the surface of the beef.

Preheat your oven to 180°C (350°F).

Arrange the meat in a single layer on a roasting tray.

Roast for 25 minutes, making sure to flip the meat strips halfway through the cooking time for even browning.

Remove from the oven and serve warm, optionally with sliced onions or soaked gari.
Notes
The creator suggests serving this with 'soakings' (gari soaked in cold water with sugar) or bread. For the best texture, ensure the meat is sliced very thin against the grain before tenderizing.
