Ingredients

  • 2 cup all-purpose flour (maida) (Premium maida; plus extra for dusting if needed)
  • 1 tsp salt (For the dough)
  • 1 tsp powdered sugar (For the dough)
  • 0.5 cup fresh curd (Plain yogurt)
  • 1.5 tsp baking powder (For the dough)
  • 0.25 tsp baking soda (For the dough)
  • water (As needed to make a soft dough; estimated from the technique)
  • 2 boiled potatoes (Peeled and mashed; medium potatoes)
  • onion (Chopped; estimated 1 small onion for the filling)
  • ginger (Chopped; estimated 1 teaspoon)
  • green chili (Chopped; use according to heat preference)
  • salt (To taste, for the potato filling)
  • 2 tsp Kashmiri red chili powder (For the potato filling)
  • 1 tsp black salt (For the potato filling)
  • fresh coriander leaves (Chopped; estimated 2 tbsp)
  • nigella seeds (For sprinkling on the kulcha; amount to taste)
  • butter or ghee (For brushing the cooked kulcha; estimated amount)

Steps

  1. 1

In a large mixing bowl, combine the maida, 1 tsp salt, powdered sugar, baking powder, and baking soda. Mix the dry ingredients evenly.

  2. 2

Add the fresh curd and mix. Gradually add water as needed, kneading until a soft, smooth dough forms. Cover the dough and let it rest for about 20 minutes so it becomes easier to roll.

  3. 3

Place the boiled potatoes in a bowl and mash them thoroughly, removing any lumps.

  4. 4

Add the chopped onion, ginger, green chili, salt to taste, Kashmiri red chili powder, black salt, and chopped coriander leaves to the mashed potatoes. Mix until the filling is evenly seasoned.

  5. 5

Divide the rested dough into about 4 equal portions. Divide the potato filling into matching portions.

  6. 6

Flatten one portion of dough into a small round. Place one portion of potato filling in the center, bring the dough edges up around the filling, and pinch them closed. Flatten gently, then roll into a thick kulcha, taking care not to let the filling break through.

  7. 7

Lightly moisten the top of the rolled kulcha with water and sprinkle with nigella seeds, pressing them gently so they adhere.

  8. 8

Heat a heavy tawa or flat skillet over medium-high heat until hot. Place the kulcha on the tawa with the moistened, seeded side facing down.

  9. 9

Cook until bubbles appear and the underside develops light brown spots, about 1–2 minutes. Turn the kulcha and cook the other side until golden brown and cooked through, pressing lightly around the edges if needed.

  10. 10

Brush the hot kulcha with butter or ghee and serve immediately. Repeat with the remaining dough and filling.

Notes

The description does not provide quantities for the chopped onion, ginger, green chili, coriander, or nigella seeds, nor does it provide the amount of water for the dough or explicit cooking steps. Those amounts and techniques are practical estimates inferred from a standard stuffed tawa kulcha method. Serve hot with yogurt, pickle, or chole.
