Ingredients
- 1 cup butter (softened)
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 3 cup flour
- 2 tsp baking powder
- 0.5 tsp salt
- 11 oz caramel (melted; enough to spread on cookies)
- 1.5 cup milk chocolate (melted; for topping)
Steps
- 1
Preheat your oven to 350°F (175°C).
- 2
In a large mixing bowl, cream together the softened butter and sugar until smooth and fluffy.
- 3
Add the egg and vanilla extract to the butter mixture and mix until well combined.
- 4
In a separate bowl, whisk together the flour, salt, and baking powder.
- 5
Gradually combine the flour mixture into the butter mixture, mixing until a dough forms.
- 6
Place the dough between two sheets of parchment paper and roll it out to your desired thickness.
- 7
Cut out circles using a cookie cutter or the rim of a glass.
- 8
Place the circles on a baking sheet and bake at 350°F for 8-11 minutes.
- 9
Remove from the oven and let the cookies cool completely.
- 10
Melt the caramel (in the microwave or over a double boiler) and spread a layer on top of each cooled cookie.
- 11
Let the caramel layer firm up before proceeding.
- 12
Melt the milk chocolate and spread it on top of the caramel layer.
- 13
Let the chocolate set completely before serving.
Notes
For the caramel, you can use store-bought caramel bits or soft caramels melted with a splash of heavy cream for a smoother consistency. If the chocolate is too thick, add a teaspoon of coconut oil while melting to make it easier to spread.
