Weights are estimates. Together, the ingredients weigh about 590 g before cooking, which is about 100 g per serving.
Steps
Wash the strawberries, dry them thoroughly, remove the tops, and chop them into small pieces.
Place the chopped strawberries, brown sugar, cinnamon, chopped pecans, and water in a saucepan. Cook over medium heat for 12–14 minutes, stirring occasionally, until the strawberries soften and the mixture becomes saucy.
Remove the saucepan from the heat and allow the strawberry mixture to cool for 2 minutes.
Slowly whisk in the tapioca starch. Continue whisking until the filling thickens. If it remains loose, add a little more tapioca starch and whisk again.
Prepare the wonton wrappers as you fill them. Lightly wet the edges of each wrapper with water so they will seal securely.
Place about 1 tablespoon of strawberry filling in the center of each wrapper. Do not overfill, or the filling may escape during frying.
Fold each wrapper over the filling and press the edges together. Crimp the sealed edges firmly with a fork to close them completely.
Heat enough neutral oil for deep-frying in a suitable pot or deep fryer. Fry the filled wontons quickly in batches until golden brown and crisp, turning as needed for even coloring.
Remove the bites from the oil and let excess oil drain away. Drizzle with melted vegan chocolate and sprinkle with powdered sugar before serving.
Notes
Seal and crimp the wonton-wrapper edges well so the strawberry filling does not escape while frying. Fry in batches without overcrowding the pot. The source does not specify the wonton-wrapper package size, frying-oil amount, chocolate quantity, or powdered-sugar quantity; use amounts appropriate for the number of bites prepared.
