Banana Bread Baked Oatmeal

Ingredients
- 2 ripe bananas (plus 1 more for topping (optional))
- 2.5 cup non-dairy milk (of choice)
- 0.25 cup grade A maple syrup
- 1 tsp vanilla extract
- 2.5 cup rolled oats
- 2 tbsp ground flax seed
- 0.5 tsp ground cinnamon
- 1 tsp baking powder
- 0.25 tsp kosher salt
- 0.5 cup walnuts or pecans (roughly chopped; can substitute with chocolate chips)

Preheat your oven to 350°F (175°C).

In a large mixing bowl, mash the 2 ripe bananas until smooth.

Add the non-dairy milk, maple syrup, and vanilla extract to the mashed bananas and whisk until well combined.

Stir in the rolled oats, ground flax seed, cinnamon, baking powder, and kosher salt.

Fold in the chopped walnuts, pecans, or chocolate chips.

Pour the mixture into a greased baking dish. If using the optional topping banana, slice it and arrange the pieces on top of the oatmeal.

Bake in the preheated oven for 30 to 35 minutes, or until the oatmeal is set and the top is golden brown.
Notes
You can substitute the ground flax seed with chia seeds if preferred. For a sweeter treat, use chocolate chips instead of nuts.
