Ingredients

  • 0.5 sponge flan (thinly sliced)
  • 1 tbsp passionfruit liqueur (optional)
  • 750 ml mango and passionfruit smoothie (divided)
  • 600 ml double cream (whipped)
  • 10 gelatine sheets (for the mousse)
  • 2 tbsp passionfruit juice (for drizzling over sponge)
  • 300 ml passionfruit juice (for the glaze, divided)
  • 3 gelatine sheets (for the glaze)
  • 4 passionfruit (flesh removed)
  • shaved coconut (for garnish)
  • cape gooseberries (for garnish)
  • mint sprigs (for garnish)
  • double cream (whipped, for finishing)

Steps

    Place the thinly sliced sponge flan all over the base of a 20cm cake ring. Press down firmly to create an even layer.

    Drizzle 2 tablespoons of passionfruit juice (and the passionfruit liqueur, if using) over the sponge base.

    Soak 10 sheets of gelatine in a bowl of cold water for 5 minutes until softened.

    Heat 1/4 of the mango and passionfruit smoothie mix in a pan over medium heat until hot but not boiling.

    Squeeze the excess water from the soaked gelatine sheets and whisk them into the hot smoothie mix until completely dissolved.

    Stir in the remaining cold smoothie mix to the gelatine mixture.

    Gently fold the whipped double cream into the smoothie mixture until combined.

    Spoon the mousse mixture over the sponge base in the cake ring. If you have any extra mousse, portion it into separate glasses. Chill in the refrigerator for 4 hours to set.

    To prepare the glaze, soak 3 sheets of gelatine in cold water for 5 minutes.

    Heat half of the 300ml passionfruit juice along with the fresh passionfruit flesh in a pan.

    Squeeze the excess water from the 3 gelatine sheets and whisk them into the hot juice until dissolved.

    Add the remaining cold passionfruit juice and whisk together.

    Spoon the glaze over the set delice and return to the refrigerator to chill for 1 hour.

    To unmold, carefully heat the edges of the cake ring with a blow torch to loosen. Lift the ring away.

    Decorate the delice with whipped cream, cape gooseberries, mint sprigs, and shaved coconut before serving.

Notes

If you don't have a blow torch, you can wrap a warm, damp cloth around the outside of the ring for a few seconds to help release the delice.
