Ingredients

  • 6 bacon (rashers)
  • 1 onion
  • 400 g chicken breast
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian herbs (dried)
  • 500 g gnocchi (store-bought)
  • 300 ml hot ham stock
  • 200 ml single cream
  • 75 g Red Leicester cheese
  • chives (for garnish)

Steps

    Place the bacon rashers in a cold pan. Turn the heat to medium and cook until the bacon is crispy. Remove the bacon from the pan and set aside, leaving the rendered bacon fat in the pan.

    Add the chicken breast and onion to the pan with the bacon fat. Season with 1 tsp each of garlic powder, paprika, and Italian herbs.

    Cook the chicken and onion mixture for 10 minutes, stirring occasionally until the chicken is cooked through.

    Add the gnocchi to the pan and stir to combine with the chicken and onions.

    Pour in the single cream and hot ham stock. Cover the pan with a lid and simmer for 3-5 minutes until the gnocchi is tender.

    Stir in the Red Leicester cheese until melted and the sauce is creamy.

    Top the dish with the crispy bacon (crumbled or chopped) and fresh chives before serving.

Notes

Ham stock provides a deep savory flavor that complements the bacon, but chicken stock can be used as a substitute.
