Weights are estimates. Together, the ingredients weigh about 765 g before cooking, which is about 190 g per serving.

Steps

  1. Place the baby potatoes in a large pot and cover with cold water by at least an inch. Add a generous pinch of salt to the water.

  2. Bring the water to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

  3. While the potatoes boil, preheat your oven to 425°F (220 °C) (220°C (425 °F)) and lightly grease a large rimmed baking sheet with olive oil or line it with parchment paper.

  4. Drain the potatoes and let them sit in the colander for a few minutes to steam dry. This helps them get crispier in the oven.

  5. Place the potatoes on the prepared baking sheet. Use the bottom of a sturdy glass, a potato masher, or a fork to gently press down on each potato until it is about 1/2 inch thick.

  6. Drizzle the smashed potatoes with olive oil and season with salt and black pepper.

  7. Roast the potatoes in the oven for 25-30 minutes, flipping them halfway through, until the edges are deep golden brown and very crispy.

  8. In a small bowl, whisk together the melted butter and minced garlic.

  9. Remove the potatoes from the oven and immediately brush or drizzle the garlic butter over them while they are still hot.

  10. Return the potatoes to the oven for an additional 2-3 minutes to let the garlic soften and become fragrant without burning.

  11. Garnish with fresh chopped parsley and serve immediately.

Notes

For extra flavor, you can add a sprinkle of grated Parmesan cheese during the last 5 minutes of roasting. Ensure the potatoes are as dry as possible before smashing to achieve maximum crunch.
