Greek Yogurt Bagel Sandwich

Ingredients
- 0.33 cup Greek yogurt
- 0.33 cup self-rising flour (self-rising flour)
- salt (to taste)
- everything bagel seasoning (for sprinkling)
- egg or water (for the egg wash)
- 0.25 avocado
- 2 eggs (for the filling)
- 1 slice Colby Jack cheese
- arugula (a handful)

In a bowl, combine the Greek yogurt and self-rising flour with a pinch of salt to create a dough.

Mix the dough for about 5 minutes until fully combined. If the dough seems too dry, add a little more yogurt; if it's too sticky, add a little more flour.

Form the dough into a log and join the ends together to shape it into a bagel.

Brush the top of the bagel with water or a beaten egg and sprinkle generously with everything bagel seasoning.

To cook in an air fryer: Cook at 350°F (175°C) for 12 minutes, then flip the bagel and cook for an additional 5 minutes.

To cook in a conventional oven: Bake at 350°F (175°C) for 25 to 30 minutes.

Let the bagel cool for 10 minutes before slicing it.

Prepare the eggs to your preference (scrambled or fried) and assemble the sandwich with the avocado, Colby Jack cheese, and fresh arugula.
Notes
If you don't have self-rising flour, you can make it by mixing all-purpose flour with baking powder and salt. The cooling time is crucial for the bagel's crumb to set.
