Ingredients

  • 2 lb Boneless, skinless chicken thighs (Cut into pieces slightly larger than nuggets)
  • Milk (Optional; enough to cover the chicken)
  • 2 tbsp Cooking oil (For toasting the breadcrumbs)
  • 2 cup Panko breadcrumbs
  • 1 cup Grated Parmesan
  • 2 Eggs
  • 2 tsp Salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 0.25 cup All-purpose flour
  • 0.25 cup Water

Steps

  1. 1

Optional: Place the chicken in a container and cover it with milk. Refrigerate for 1 hour or overnight.

  2. 2

Preheat the oven to 400 °F (205 °C). If the chicken was marinated in milk, drain it and pat it thoroughly dry.

  3. 3

Cut the chicken into pieces slightly larger than nuggets.

  4. 4

Heat the 2 tbsp of cooking oil in a skillet. Add the panko breadcrumbs and toast them, stirring constantly, until lightly golden.

  5. 5

Remove the breadcrumbs from the heat and let them cool. Then mix them with the grated Parmesan.

  6. 6

In a container, whisk the eggs with the salt, garlic powder, onion powder, paprika, flour, and water until smooth.

  7. 7

Add the chicken pieces to the egg batter and toss to coat well.

  8. 8

Remove the chicken pieces, allowing the excess batter to drip off, then coat them in the panko and Parmesan mixture.

  9. 9

Arrange the breaded pieces in a single layer on a baking sheet lined with parchment paper.

  10. 10

Bake for about 20 minutes, until the nuggets are golden and cooked through.

  11. 11

To freeze them, let them cool completely. Freeze them first in a single layer, then transfer them to an airtight container. Store for up to 3 months.

  12. 12

To reheat them, cook them in an air fryer at 350 °F (175 °C) for 8 to 10 minutes, or in the oven at 375 °F (190 °C) for 10 to 15 minutes.

Notes

The amount of milk is not specified in the source: use enough to cover the chicken. Cooking time may vary depending on the size of the pieces; the source only indicates that they should be golden and cooked through.
