Chatkhara Beef Fry
A bold, fiery, and deep-roasted beef dish that is a staple for Eid parties. Tender beef is slow-cooked in yogurt and spices, then finished with a high-heat fry for a crispy, street-style edge.

Ingredients
- 1 kg beef (boneless, thin slices or small cubes)
- 1 onion (large, sliced)
- 1 tbsp ginger (crushed)
- 1 tbsp garlic (crushed)
- 5 green chillies (crushed)
- 0.5 cup yoghurt
- 1 tsp turmeric
- 1 tsp red chilli powder (for the beef base)
- 1 tsp coriander powder
- 1.5 tsp salt (for the beef base)
- 1 cup water
- 1 tsp chaat masala (part of Chatkhara Spice Mix)
- 2 tbsp corn flour (part of Chatkhara Spice Mix)
- 1 tsp red crush chillies (part of Chatkhara Spice Mix)
- 1 tsp red chilli powder (part of Chatkhara Spice Mix)
- 0.5 tsp salt (part of Chatkhara Spice Mix)
- 1 tsp roasted cumin (part of Chatkhara Spice Mix)
- 0.5 tsp crushed coriander seeds (part of Chatkhara Spice Mix)
- 1 tsp dry methi (fenugreek; part of Chatkhara Spice Mix)
- 1 tbsp lemon juice (part of Chatkhara Spice Mix)
- 1 tsp sesame seeds (part of Chatkhara Spice Mix)
- 3 tbsp oil or ghee (for final fry)
- 8 curry leaves
- 4 green chillies (sliced, for final fry)

In a large pot, combine the beef slices or cubes, sliced onion, crushed ginger, crushed garlic, 4-5 crushed green chillies, yoghurt, turmeric, 1 tsp red chilli powder, coriander powder, 1.5 tsp salt, and 1 cup of water.

Cook the mixture on medium heat, stirring occasionally, until the beef is completely tender and the water has evaporated entirely. Alternatively, use a pressure cooker to speed up this process until the beef is soft and the liquid is gone.

Once the beef is dry, add the 'Secret Chatkhara Spice Mix' ingredients: chaat masala, corn flour, red crush chillies, 1 tsp red chilli powder, 0.5 tsp salt, roasted cumin, crushed coriander seeds, dry methi (fenugreek), 1 tbsp lemon juice, and sesame seeds. Stir well to ensure the beef is thoroughly coated.

In a separate frying pan, heat oil or ghee over medium-high heat. Add the curry leaves and 3-4 sliced green chillies, sautéing until they become fragrant.

Add the spiced, cooked beef to the frying pan. Fry on high heat for 5 to 7 minutes, stirring frequently, until the beef becomes slightly crispy and the masala forms a rich coating.

Garnish with fresh coriander and an extra squeeze of lemon juice if desired.

Serve hot with naan, rice, or a fresh chutney.
Notes
You can use a pressure cooker to speed up the initial beef cooking process. Ensure the water is completely dried out before adding the spice mix to get the best texture.
