Ingredients
- 2 cup cooked chickpeas (Drained and rinsed; if using canned chickpeas, dry them thoroughly.)
- 0.5 cup fresh parsley (Loosely packed.)
- 0.5 cup fresh cilantro (Loosely packed.)
- 0.5 yellow onion (Roughly chopped.)
- 2 garlic cloves (Peeled.)
- 0.5 cup gluten-free oat flour (Use certified gluten-free oat flour to keep the recipe gluten-free.)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 0.5 tsp paprika
- 1 tsp baking powder (Check that it is gluten-free if necessary.)
- 0.75 tsp fine salt (Adjust to taste.)
- 0.25 tsp black pepper
- 1 tbsp lemon juice (Freshly squeezed.)
- 1 tbsp olive oil (Plus more for brushing the waffle iron if needed.)
- 2 tbsp water (Add only as needed to make a thick, scoopable batter.)
Steps
- 1
Drain and rinse the chickpeas, then pat them very dry with a clean towel. Excess moisture can make the waffles soft rather than crisp.
- 2
Preheat a waffle iron according to the manufacturer's instructions, usually to a medium-high setting. Lightly brush the plates with olive oil if they are not well seasoned or nonstick.
- 3
Place the chickpeas, parsley, cilantro, onion, and garlic in a food processor. Pulse until finely chopped and the mixture holds together, but do not process it into a completely smooth purée.
- 4
Add the oat flour, cumin, coriander, paprika, baking powder, salt, black pepper, lemon juice, and olive oil. Pulse several more times until evenly combined.
- 5
Add the water a little at a time only if the mixture is too dry. The finished batter should be thick and cohesive enough to scoop; it should not be runny.
- 6
Scoop the batter onto the center of the preheated waffle iron, using enough to cover the plates without forcing the mixture out at the sides. Close the iron and cook for about 5 minutes, or until the waffle is browned and crisp on the outside.
- 7
Carefully release the waffle with a silicone spatula. Repeat with the remaining batter, lightly oiling the plates between batches if necessary.
- 8
Serve the falafel waffles warm with hummus, tahini sauce, chopped salad, pickles, or other falafel-style toppings.
