- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- salt (to taste)
- pepper (to taste)
- 3 garlic (minced)
- 1 roasted red pepper (sliced)
- 1 cup roasted red pepper puree
- 1 cup heavy cream
- 0.5 cup chicken broth
- 0.75 cup Parmesan cheese (grated)
- 2 tbsp butter
- fresh parsley (for garnish)

Season the chicken thighs evenly on both sides with smoked paprika, garlic powder, salt, and pepper.

Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on both sides. Once seared, remove the chicken from the skillet and set aside.

In the same skillet, melt 2 tablespoons of butter. Add the minced garlic and cook for about 1 minute until fragrant.

Pour in the roasted red pepper puree and chicken broth, scraping up any browned bits from the bottom of the pan.
