  • 1 cup cottage cheese (lactose free recommended; blended until smooth)
  • 1 tbsp milk (optional, to help blend cottage cheese; use up to 2 tbsp)
  • 2 ripe bananas (mashed)
  • 4 eggs (large)
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 cup oat flour
  • 0.5 cup almond flour
  • 0.5 cup light brown sugar (can sub regular granulated sugar or coconut sugar)
  • 1 tsp baking powder
  • sea salt (to taste)
  • cinnamon (to taste)
  • 0.5 cup chocolate chips (estimated quantity for mixing in and topping)

Steps

    Set the oven to 350°F (175°C) and prepare a loaf tin with parchment paper or grease.
