Ingredients

  • 1.5 lb beef (flank steak or sirloin, sliced into strips)
  • 3 bell peppers (sliced into strips (any color))
  • 1 onion (sliced into strips)
  • 1 oz fajita seasoning (one standard packet)
  • 14.5 oz diced tomatoes (one can, undrained)

Steps

  1. 1

Slice the beef, bell peppers, and onion into thin strips.

  2. 2

Add the sliced beef, bell peppers, and onion to the slow cooker.

  3. 3

Pour in the can of diced tomatoes and sprinkle the fajita seasoning over the top.

  4. 4

Stir the ingredients together to ensure everything is evenly coated in the seasoning.

  5. 5

Cover and cook on high for 2 to 3 hours, or on low for 4 to 6 hours, until the steak is tender and the vegetables are soft.

Notes

Serve with warm tortillas, sour cream, guacamole, and fresh lime wedges. For best results, use a lean cut of beef like flank steak.
