Ingredients

  • 13.5 oz full-fat coconut milk (Do not use light coconut milk.)
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 tsp yellow curry powder
  • 3 tbsp red curry paste (Thai Kitchen is recommended; reduce or increase for desired spice level.)
  • 2 tsp ground coriander
  • 0.5 tsp chili powder
  • 0.25 tsp salt (Listed with pepper; adjust to taste.)
  • 0.25 tsp black pepper (Adjust to taste.)
  • 1 tbsp lime juice (Juice of 1 lime.)
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 cup baby spinach (Coarsely chopped.)
  • 1 package frozen chicken or pork wontons (Use frozen wontons or dumplings; do not thaw. Use a variety with a flavor you enjoy.)
  • 1 tbsp toasted sesame oil
  • 0.25 cup cilantro (Diced.)
  • 0.25 cup green onions (Thinly sliced.)
  • sesame seeds (Toasted if possible; amount not specified.)
  • chili crunch (Use lots, for drizzling over the finished dish.)
  • cooked white rice (Optional, for serving; amount not specified.)

Steps

  1. 1

Heat the oven to 400°F (205°C). Lightly grease a 9-by-13-inch baking dish.

  2. 2

In the prepared baking dish, whisk together the coconut milk, garlic paste, ginger paste, yellow curry powder, red curry paste, ground coriander, chili powder, salt, pepper, lime juice, rice vinegar, and soy sauce until the sauce is smooth.

  3. 3

Stir the chopped spinach into the sauce until evenly distributed.

  4. 4

Arrange the frozen wontons evenly in the sauce. Press them down gently so they are mostly coated.

  5. 5

    Bake uncovered for 20 minutes.

  6. 6

Remove the dish from the oven and drizzle the toasted sesame oil over the top.

  7. 7

Stir gently and flip the wontons so they become fully coated in the sauce. Taste and adjust the seasoning if needed.

  8. 8

Top with the diced cilantro, sliced green onions, sesame seeds, and a generous drizzle of chili crunch.

  9. 9

Serve immediately on its own or over cooked white rice.

Notes

For storage, lift the wontons out of the sauce with a slotted spoon and store them separately in airtight containers. Reheat the sauce until hot, then add the wontons back just before serving so they do not bloat. The author notes that Trader Joe’s crunchy chili onion works especially well, and that particularly spicy red curry pastes may be reduced to 1 tablespoon.
