Ingredients
- 1 bell pepper (Use one large bell pepper; cut in half lengthwise and remove seeds and ribs.)
- 1 tbsp mayonnaise (Use more or less to taste.)
- 1 tsp mustard (Use more or less to taste.)
- 4 oz deli turkey (Sliced organic turkey, as shown or mentioned in the video.)
- 2 tbsp red onion (Thinly sliced.)
- 0.25 cucumber (Thinly sliced.)
- 0.5 cup shredded lettuce
- 1 tsp red wine vinegar (Drizzle over the filling.)
- 1 tsp olive oil (Drizzle over the filling.)
- salt (To taste.)
- black pepper (To taste.)
- dried oregano (To taste.)
- 1 slice provolone cheese (Place on top of the assembled filling.)

Wash and dry the bell pepper. Cut it in half lengthwise, then remove the stem, seeds, and inner ribs. Pat the halves dry so the sandwich does not become watery.

Spread mayonnaise over the cut surface of one bell pepper half. Add mustard over the mayonnaise, distributing both condiments across the inside of the pepper.

Layer the sliced deli turkey inside the pepper half, folding the slices as needed so they fit securely.

Add the sliced red onion, sliced cucumber, and shredded lettuce over the turkey.

Drizzle the vegetables with red wine vinegar and olive oil. Season with salt, black pepper, and oregano to taste.

Top the filling with the provolone slice. Place the second bell pepper half over the top, cut side facing the filling, to close the sandwich.

Serve immediately while the bell pepper and vegetables are crisp. If desired, secure the sandwich with toothpicks before eating.
