Ingredients

  • 125 g Quark (low-fat quark or curd cheese)
  • 0.5 Egg (size M, whisk and use half)
  • 0.5 EL Sugar
  • 65 g All-purpose flour (Type 405)
  • 0.5 Prise(n) Salt
  • 15 g Almonds (ground)
  • 15 g Breadcrumbs
  • 1 EL Brown sugar
  • 250 ml Whole milk
  • 20 g Powdered sugar
  • 0.25 Bourbon vanilla bean (seeds scraped out)
  • 1.165 EL Cornstarch
  • 50 g Heavy cream
  • 6 Chocolate pralines (with filling (e.g., vanilla crescent pralines))
  • 30 g Butter (divided)

Steps

    Place part of the butter in a pot and melt over low heat.

    Thoroughly whisk the melted butter and the half egg together in a bowl.

    Add the quark, sugar, a pinch of salt, and the flour to the butter-egg mixture and knead into a smooth dough. Let the dough rest briefly.

    In a large pot, bring plenty of water with a pinch of sugar to a simmer (do not boil vigorously).

    Divide the dough into 6 equal portions. Flatten each portion, place a chocolate praline in the center, and carefully seal the dough around it. Roll into round dumplings.

    Carefully slide the dumplings into the simmering water and let them cook for about 10-12 minutes until they float to the surface.

    Meanwhile, for the vanilla sauce, whisk part of the milk with the cornstarch until smooth. Bring the remaining milk to a boil in a pot with the powdered sugar, vanilla bean seeds, and cream.

    Stir the prepared starch mixture into the boiling milk, let it boil briefly until the sauce thickens, and then set aside.

    Melt the remaining butter in a pan. Add the ground almonds, breadcrumbs, and brown sugar, and roast until golden brown while stirring.

    Remove the finished dumplings from the water with a slotted spoon, drain briefly, and roll them directly in the almond-crumb mixture.

    Arrange the dumplings on plates and serve with the warm vanilla sauce.

Notes

The pralines should be well chilled so they don't liquefy too quickly while shaping the dumplings. The vanilla sauce can be served warm or cold.
