Ingredients
- 2 chicken breasts (boneless, skinless)
- 2 tbsp blackening seasoning (or preferred chicken seasoning rub)
- 2 tbsp butter
- 0.5 onion (finely diced)
- 4 clove garlic (minced)
- 1 cup heavy cream
- 0.5 cup pasta water (reserved from boiling spaghetti)
- 0.5 cup Parmesan cheese (freshly grated)
- 1 tsp soy sauce
- 8 oz spaghetti (cooked al dente)

Start by rubbing the chicken breasts thoroughly with the blackening seasoning until well-coated on all sides.

Heat a pan over medium-high heat. Add the chicken breasts and pan-fry until they are blackened and cooked through (internal temperature of 165°F). Remove the chicken from the pan and set aside to rest.

In the same pan used for the chicken, melt the butter. Add the diced onions and minced garlic, sautéing until fragrant and translucent.

Pour in the heavy cream and the reserved pasta water. Stir to combine, scraping up any browned bits from the bottom of the pan.

Stir in the Parmesan cheese and a splash of soy sauce. Whisk until the cheese is melted and the sauce begins to thicken slightly.

Add the cooked spaghetti to the pan and mix well until the pasta is thoroughly coated in the creamy garlic parmesan sauce.

Slice the rested blackened chicken and place it on top of the pasta. Serve immediately.
Notes
The soy sauce adds a unique umami depth to the parmesan sauce. Ensure you reserve your pasta water before draining the spaghetti to help emulsify the sauce.
