Ingredients

  • 1 cup oats (quick oats or old fashioned oats)
  • 3 tbsp unsweetened cocoa powder (plus more to top)
  • 1.5 tbsp chia seeds
  • 3 tbsp espresso (or brewed coffee, cooled; equivalent to 2 espresso shots)
  • 1.25 cup unsweetened almond milk
  • 2.5 tbsp pure maple syrup (or honey; divided (2 tbsp for oats, 0.5 tbsp for yogurt))
  • 1.25 tsp vanilla extract (divided (1 tsp for oats, 0.25 tsp for yogurt))
  • 1.5 cup Greek yogurt (or yogurt of choice)

Steps

    In a medium bowl or container, mix your dry ingredients (oats, 3 tbsp cocoa powder, and chia seeds) together until well combined.

    Add the cooled espresso (or brewed coffee), almond milk, 2 tablespoons of maple syrup (or honey), and 1 teaspoon of vanilla extract to the dry mixture.

    Mix well, cover, and store in the fridge for 4-8 hours or overnight to allow the oats and chia seeds to hydrate.

    Once the oats are ready, prepare the Greek yogurt topping by mixing the yogurt with the remaining 0.25 teaspoon of vanilla extract and 0.5 tablespoon of maple syrup (or honey). Feel free to add more sweetener if you prefer.

    To assemble, add half of the overnight oat mixture into a serving bowl.

    Top the oats with 3/4 cup of the prepared Greek yogurt mixture.

    Sift additional cocoa powder over the top for the classic tiramisu look and serve. Repeat for the second serving or save for the next day.

Notes

This recipe makes 2 servings. You can store the second serving in the fridge to enjoy the next day. If you find Greek yogurt too tangy, you can adjust the sweetener or use a different type of yogurt.
