  • 5 medium potatoes (shredded)
  • 1 tbsp salt (to dehydrate the potato)
  • 400 g Manchego cheese (shredded)
  • 1 egg
  • pepper (to taste)
  • 0.5 cup sour cream
  • 0.33 cup all-purpose flour (plain flour)
  • 400 g bacon (previously fried and chopped)
  • 1 tsp baking powder
  • oil or butter (to grease the waffle maker)
  • chives (chopped, for garnish)
  • maple syrup (for serving)

Steps

    Grate the 5 medium potatoes and place them in a colander.

    Add one tablespoon of salt to the shredded potatoes and let them rest for 10 minutes so they release as much liquid as possible.

    Squeeze the potatoes well to remove excess moisture and place them in a large bowl.

    Add the sour cream, flour, shredded Manchego cheese, previously fried and chopped bacon, egg, baking powder, and pepper to taste to the bowl.
