Ingredients
- 5 medium potatoes (shredded)
- 1 tbsp salt (to dehydrate the potato)
- 400 g Manchego cheese (shredded)
- 1 egg
- pepper (to taste)
- 0.5 cup sour cream
- 0.33 cup all-purpose flour (plain flour)
- 400 g bacon (previously fried and chopped)
- 1 tsp baking powder
- oil or butter (to grease the waffle maker)
- chives (chopped, for garnish)
- maple syrup (for serving)
Steps
- 1
Grate the 5 medium potatoes and place them in a colander.
- 2
Add one tablespoon of salt to the shredded potatoes and let them rest for 10 minutes so they release as much liquid as possible.
- 3
Squeeze the potatoes well to remove excess moisture and place them in a large bowl.
- 4
Add the sour cream, flour, shredded Manchego cheese, previously fried and chopped bacon, egg, baking powder, and pepper to taste to the bowl.
- 5
Mix all ingredients until they are well combined.
- 6
Preheat and grease your waffle maker with a bit of oil or butter.
- 7
Place a portion of the mixture in the waffle maker and cook for approximately 6 minutes, or until the waffle is golden brown and cooked through.
- 8
Serve the waffles hot and accompany with chopped chives and maple syrup to taste.
Notes
It is essential to squeeze the potato very well after the 10-minute rest with salt to ensure the waffles stay crispy and not soggy.
