A moist, tender two-layer chocolate cake with a rich cocoa frosting. The batter is thin before baking, and the finished cake should cool before frosting so the icing remains spreadable rather than melting.

Steps

Cake

  1. Preheat the oven to 350°F (180 °C) (175°C (350 °F)). Grease and line two 8-inch cake pans.

  2. In a bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt until evenly combined.

  3. Add the eggs, milk, oil, and 2 teaspoons of vanilla extract to the dry ingredients, then mix until combined.

  4. Stir in the boiling water. The batter will be thin.

  5. Pour the batter evenly into the two prepared 8-inch cake pans.

  6. Bake at 350°F (180 °C) (175°C (350 °F)) for 30 minutes.

  7. Remove the cakes from the oven and let them cool in the pans for 20–30 minutes before frosting so the icing does not melt.

Frosted icing

  1. For the frosting, mix the melted butter and cocoa powder together until combined.

  2. Add the powdered sugar, milk, and 1 teaspoon of vanilla extract, then beat until fluffy.

  3. If the frosting is too thick, add additional milk 1 tablespoon at a time until it reaches a consistency that spreads easily.

  4. Spread the frosting over the cooled cake layers.

Notes

The source does not specify whether the cake should be removed from the pans before frosting or how the layers should be stacked. Cool for 20–30 minutes before frosting, as stated by the author. The author identified the recipe as adapted from Hershey’s Perfectly Chocolate Cake.
