Ingredients

  • 4 rebanadas bacon (Diced)
  • 2 tbsp unsalted butter
  • 1 small onion (Finely chopped)
  • 2 tallos celery (Finely chopped)
  • 2 tbsp all-purpose flour (De uso general)

  • 2 cup shredded cheddar cheese (Divided; one portion is stirred into the soup and the rest is reserved for serving)
  • 0.25 cup scallions (Sliced, for topping)
  • 0.75 cup sour cream (For serving; estimated amount based on the topping instruction)
  • 0.5 cup additional shredded cheddar cheese (For serving; estimated amount based on the topping instruction)

Steps

    Heat a large heavy-bottomed pot over medium heat. Add the diced bacon and cook for 6 to 8 minutes, stirring occasionally, until golden brown and crisp. Remove the bacon with a slotted spoon and drain on paper towels; reserve the rendered fat in the pot.

    Add the butter to the bacon fat and let it melt. Add the chopped onion and celery and sauté for 4 to 5 minutes, until softened and fragrant, without letting them burn.

    Sprinkle the flour over the vegetables. Cook for 1 to 2 minutes, stirring constantly, until a smooth paste forms and the raw flour taste is eliminated.

    Gradually pour in the chicken broth while whisking or stirring continuously to break up any lumps. Scrape the bottom of the pot to incorporate any browned bits.

    Increase the heat until the soup reaches a gentle boil. Reduce the heat, partially cover the pot, and cook for 15 to 20 minutes, stirring occasionally, until the potatoes are fork-tender and the soup has thickened slightly.
