Ingredients

  • 1.5 lb sirloin steak (cut into bite-sized cubes)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 zucchini (medium, sliced)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 onion (large, chopped)
  • 1.5 cup baby potatoes (diced and parboiled)
  • 4 clove garlic (minced)
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp crushed red pepper flakes (optional)
  • salt (to taste)
  • black pepper (to taste)
  • 2 tbsp fresh parsley (chopped, for garnish)

Steps

    Prep the potatoes by dicing them and parboiling in salted water until just tender, then drain and set aside.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

    Add the sirloin steak cubes to the skillet in a single layer. Season with salt and black pepper.

    Sear the beef for 3-4 minutes until browned on all sides and cooked to your desired level of doneness. Remove the beef from the skillet and set aside on a plate.

    In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter.

    Add the diced parboiled potatoes to the skillet and cook for 3-5 minutes until they begin to turn golden and crispy.

    Add the sliced zucchini, chopped red and yellow bell peppers, and chopped onion to the skillet with the potatoes.

    Sauté the vegetables for 5-7 minutes until they are tender-crisp.

    Stir in the minced garlic, Italian seasoning, smoked paprika, dried thyme, and red pepper flakes (if using). Cook for 1 minute until the garlic is fragrant.

Notes

Parboiling the potatoes ensures they finish cooking at the same time as the other vegetables and get a nice crispy exterior. To parboil, place diced potatoes in boiling water for about 5-8 minutes until slightly softened but not falling apart.
