Ingredients

  • 0.5 banana (medium, mashed (about 1/4 cup))
  • 1 tbsp almond butter (creamy (can sub peanut butter or cashew butter))
  • 1 tbsp maple syrup
  • 0.5 tsp vanilla extract
  • 0.5 cup oat flour
  • 0.25 tsp cinnamon
  • 0.25 tsp baking powder
  • salt (pinch)
  • 1 tbsp dark chocolate chips (plus more for topping)

Steps

  1. 1

Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.

  2. 2

In a small mixing bowl, mash half of a medium banana with a fork until smooth.

  3. 3

Add the almond butter, maple syrup, and vanilla extract to the mashed banana and whisk until well combined.

  4. 4

Stir in the oat flour, cinnamon, baking powder, and a pinch of salt. Mix until a soft dough forms.

  5. 5

Fold in the dark chocolate chips.

  6. 6

Scoop the dough onto the prepared baking sheet and shape it into one large, thick cookie. Top with a few extra chocolate chips if desired.

  7. 7

Bake for 10-12 minutes, or until the edges are lightly golden and the center is set.

  8. 8

Remove from the oven and let the cookie cool on the pan for at least 5 minutes to allow it to firm up before eating.
