Honey Buffalo Pasta

Ingredients
- 2 chicken breasts (diced)
- 1.5 tsp smoked paprika (for seasoning chicken)
- garlic granules (to taste, for seasoning chicken)
- onion granules (to taste, for seasoning chicken)
- Cajun seasoning (to taste, for seasoning chicken)
- 150 g dried pasta
- 1 red pepper (sliced or diced)
- 1 onion (diced)
- 2 garlic cloves (minced)
- 1.5 tbsp tomato puree
- 200 ml chicken stock
- 90 ml single cream
- 1.5 tbsp honey
- 2 tbsp buffalo sauce
- fresh parsley (optional garnish)

Dice the chicken breasts into bite-sized pieces and place them in a bowl. Season thoroughly with the smoked paprika, garlic granules, onion granules, and Cajun seasoning. Set aside to marinate briefly.

Heat a large pan over medium heat. Add the diced onion and red pepper and fry for 5-6 minutes until they begin to soften.

Add the seasoned chicken to the pan with the vegetables. Fry for a further 6-7 minutes until the chicken is browned and cooked through.

Add the tomato puree and minced garlic to the pan. Cook for 1 minute, stirring constantly to prevent the garlic from burning.

Pour in the chicken stock and single cream. Bring the mixture to a gentle simmer.

Add the honey and buffalo sauce to the pan. Stir thoroughly to combine all the sauce ingredients.

While the sauce simmers, cook the dried pasta in a separate pot of boiling salted water according to the package instructions.

Once the pasta is cooked, drain it and add it directly into the sauce pan. Toss well to ensure the pasta is evenly coated.

Top with fresh parsley if desired and serve immediately.
Notes
You can adjust the heat by adding more or less buffalo sauce. For a thicker sauce, let it simmer for a few extra minutes before adding the pasta.
