Ingredients
- 2 cup all-purpose flour (plus more for dusting)
- 0.33 cup organic cane sugar
- 1 tbsp baking powder
- 2 tsp Earl Grey tea leaves (finely ground from about 2 tea bags)
- 0.5 tsp ground cardamom
- 0.25 tsp salt
- 1 tbsp lemon zest (from about 1 lemon)
- 0.5 cup vegan butter (cold, cubed)
- 0.5 cup full-fat coconut milk (cold, shaken before measuring)
- 1 tsp vanilla extract
- 0.5 cup powdered sugar (for the glaze)
- 1 tbsp lemon juice (for the glaze)

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, cane sugar, baking powder, ground Earl Grey tea leaves, cardamom, salt, and lemon zest until well combined.

Add the cold, cubed vegan butter to the flour mixture. Use a pastry cutter or two forks to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

In a small measuring cup, stir together the cold coconut milk and vanilla extract.

Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture until a shaggy dough begins to form. Do not overmix.

Turn the dough out onto a lightly floured surface. Gently knead it 2-3 times just until it holds together, then pat it into a circle about 1 inch thick.

Cut the circle into 8 equal wedges using a sharp knife or bench scraper.

Place the wedges onto the prepared baking sheet, leaving space between each scone. For best results, place the tray in the freezer for 15-30 minutes before baking to ensure the butter is very cold.

Bake for 18-22 minutes, or until the edges are lightly golden brown.

While the scones cool, whisk together the powdered sugar and lemon juice in a small bowl to create a glaze. Drizzle over the cooled scones before serving.
Notes
Ensure your vegan butter and coconut milk are very cold to achieve a flaky, buttery texture. You can use any Earl Grey tea bags; just ensure the leaves are finely ground so they distribute evenly through the dough.
