Ingredients
- 1.5 lb chicken breast (cut into cutlets or pounded thin)
- seasoning salt (or salt and black pepper to taste)
- 0.5 tsp garlic powder (for seasoning chicken)
- 1 tsp fresh cracked black pepper (divided; for seasoning chicken and sauce)
- 2 tbsp olive oil (for searing)
- 2 tbsp butter (unsalted)
- 2 tbsp all-purpose flour
- 3 fresh garlic (cloves, minced)
- 1 cup chicken broth
- 1 tbsp Dijon mustard
- 0.5 tsp onion powder
- 0.5 cup heavy whipping cream
- fresh parsley (chopped for garnish)

Season the chicken breasts with seasoning salt (or salt and pepper), garlic powder, and fresh cracked pepper. Flip the chicken and season the other side generously.

Turn your pan on medium-high heat and drizzle with olive oil.

Add the chicken to the pan and sear until cooked through and golden brown on both sides. Once cooked, remove the chicken from the pan and set aside.

In the same pan, add the butter. Use a spatula or spoon to scrape up any of the browned bits (fond) from the bottom of the pan as the butter melts.

Add the flour to the melted butter. Stir constantly and let it cook for about one minute to remove the raw flour taste.

Notes
