Creamy Lemon Caper Salmon

Ingredients
- 4 salmon (fillets)
- 1 tbsp butter (a knob)
- 2 onions (thinly sliced)
- 3 cloves garlic (minced)
- 3 tsp capers
- 2 handfuls fresh spinach (large handfuls)
- 400 ml light cream (4% fat)
- 1 lemon (zest and juice)
- chili flakes (to taste)
- salt (go easy)

Steps

Season the salmon fillets with salt and pepper.

In a large skillet, melt a knob of butter and sear the salmon fillets until golden and tender. Remove the salmon from the pan and set aside.

In the same skillet, sauté the sliced onions and minced garlic until soft and fragrant.

Add the capers and chili flakes, then stir in the fresh spinach. Let the spinach wilt slightly.

Pour in the light cream, lemon zest, and juice. Stir well and simmer for a few minutes until the sauce thickens slightly.

Place the salmon fillets back into the skillet to coat them with the sauce and warm them through briefly before serving.
Notes
A little tip: go easy on the salt, as the capers already add plenty of flavor to the sauce. This recipe also works very well with white fish.
