Ingredients

  • 100 g fava bean flour (fava bean flour)
  • 80 g cauliflower flour (cauliflower flour)
  • 50 g buckwheat flour (buckwheat flour)
  • 2 eggs (approximately 100 ml)
  • 40 ml warm water (warm water)
  • 15 ml extra virgin olive oil (extra virgin olive oil)
  • 3 g salt

Steps

  1. 1

In a large bowl, combine the fava bean flour, cauliflower flour, and buckwheat flour along with the salt until the mixture is homogeneous.

  2. 2

In a separate container, lightly whisk the eggs together with the extra virgin olive oil.

  3. 3

Pour the liquid egg and oil mixture over the dry ingredients and begin to incorporate using a spatula.

  4. 4

Gradually add the warm water while continuing to mix until the flour absorbs all the moisture evenly.

  5. 5

Knead the dough with your hands on a clean surface for 5 minutes until you obtain a smooth, elastic, and compact dough.

  6. 6

Divide the dough into 4 equal-sized portions and form a smooth ball with each of them.

  7. 7

Place each portion between two sheets of parchment paper and roll it out with a rolling pin until you achieve a thin and even disc.

  8. 8

Heat a non-stick skillet over medium-high heat and ensure it is very hot before placing the dough.

  9. 9

Cook the tortilla for 2 minutes on the first side until subtle bubbles are observed and the edges begin to lift.

  10. 10

Flip with a spatula and cook on the opposite side for an additional minute to ensure complete cooking without losing flexibility.

  11. 11

Remove from heat and store the tortillas stacked inside a clean cloth to retain steam and keep them soft.

Notes

To keep the tortillas flexible, it is essential to store them in a clean cloth immediately after cooking to trap the steam. These are gluten-free and suitable for diabetics.
