Mexican Shrimp Bowl

Ingredients
- 1 tbsp Olive oil (For sautéing the shrimp)
- 150 g Shrimp (Peeled and deveined)
- 2 Garlic (Cloves, minced)
- 1 tsp Dried herbs (Dried mixed vegetables or herbs)
- 1 cup Cooked rice (White or brown rice)
- 1 tbsp Parsley (Fresh, chopped)
- Salt (To taste)
- Black pepper (To taste)
- 0.5 cup Natural yogurt (Plain yogurt for the sauce)
- 1 tbsp Lemon juice (Freshly squeezed)
- 0.5 tsp Paprika (For the sauce)
- 0.5 cup Bell pepper (Diced)
- 0.25 cup Red onion (Finely diced)
- 0.25 cup Corn (Canned or steamed)
- 0.5 Avocado (Sliced or diced)

Place a frying pan over medium heat and add olive oil.

Add the shrimp, minced garlic, and dried herbs to the pan. Sauté everything well until the shrimp are pink and cooked through.

In a bowl, combine the cooked rice with chopped parsley, salt, and black pepper. Mix well.

Prepare the sauce by mixing natural yogurt, a drizzle of olive oil, lemon juice, salt, black pepper, and paprika in a small bowl until smooth.

Assemble the bowl by placing the seasoned rice at the base.

Add the sautéed shrimp, diced bell peppers, red onion, corn, and avocado on top of the rice.

Drizzle the prepared yogurt sauce over the bowl and serve.
Notes
You can use any color of bell pepper for the salad. The dried herbs can be a mix of oregano, thyme, or a pre-made dried vegetable seasoning mix.
