  • 135 g Soba Noodles (dry weight, approximately 1/2 package)
  • 0.25 Red Cabbage (small, thinly sliced)
  • 0.5 lb Snap Peas (blanched and thinly sliced)
  • 2 Carrots (large, thinly sliced into long strips)
  • 1 Red Bell Pepper (thinly sliced into long strips)
  • 12 oz Frozen Shelled Edamame (340g)
  • Peanut-Ginger Dressing (to taste; contains lime, ginger, and garlic)
  • Salt (to taste)
  • Lime Juice (to taste)
  • Peanuts (chopped, for garnish)
  • Chili Flakes (optional, for garnish)
  • Sesame Seeds (optional, for garnish)

Steps

    Cook the soba noodles in a large pot of boiling water according to the package's instructions. Drain and rinse with cold water to stop the cooking process.

    Prepare the vegetables: thinly slice the red cabbage, carrots, and red bell pepper into long, thin strips to match the shape of the noodles.

    Blanch the snap peas in boiling water for 1-2 minutes until bright green and slightly tender, then shock in ice water. Thinly slice them into long strips.

    Thaw or cook the frozen shelled edamame according to package directions.

    In a large mixing bowl, combine the cooked soba noodles, sliced cabbage, blanched snap peas, carrots, bell pepper, and edamame.
