Ingredients

  • 10 garlic cloves (peeled and ends removed)
  • 0.5 cup egg whites (pasteurized; used as a creamy filler)
  • 2 tbsp neutral oil (such as avocado or grapeseed oil)
  • 1 tbsp lemon juice (freshly squeezed)
  • salt (to taste)

Steps

    Place the peeled garlic cloves and a pinch of salt into a food processor or high-speed blender. Pulse until the garlic is finely minced.

    Add the pasteurized egg whites to the garlic mixture. Blend on high until the mixture becomes frothy and begins to thicken.

    While the blender is running on a low-to-medium setting, very slowly drizzle in the oil in a thin, steady stream to emulsify the mixture.

    Add the lemon juice and continue to blend until the dip reaches a thick, fluffy, and creamy consistency.

    Taste and adjust salt if necessary. Transfer to a container and chill in the refrigerator before serving to allow the flavors to meld.

Notes

The creator notes that while this version doesn't taste exactly like the oil-heavy original, it is nearly indistinguishable when used as a spread in sandwiches or burgers. Ensure you use pasteurized egg whites since they are not cooked.
