Ingredients

  • 1 cup oat flour
  • 1 egg (large)
  • 0.25 cup unsweetened almond milk
  • 0.5 cup nonfat Greek yogurt
  • 1 scoop protein powder (approx. 17g protein)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • cooking spray (to grease the mold)
  • 0.5 70% cacao chocolate bar (melted (e.g., Lindt))

Steps

    In a mixing bowl, combine the oat flour, egg, almond milk, Greek yogurt, protein powder, baking powder, and vanilla extract.

    Mix all the ingredients together thoroughly until the batter is completely smooth.

    Lightly spray a silicone donut mold with cooking spray to prevent sticking.

    Distribute the batter evenly among the cavities of the donut mold.

    Place the mold in the microwave and cook for 5 to 6 minutes, or until the donuts are set and firm to the touch.

    Carefully remove the donuts from the mold. Melt the 70% cacao chocolate in a microwave-safe bowl in short intervals.

    Lightly dip the top of each donut into the melted chocolate or drizzle the chocolate over them.

    Place the donuts on parchment paper and let them cool in the fridge for a few minutes until the chocolate has set before serving.
